Dates in bacon coat on salad

Preparation:

  1. Wrap a strip of bacon around each date.
  2. Start the 220°C mode and bake the dates for 15 minutes until golden brown.
  3. In the meantime, mix the dressing ingredients and season to taste with salt and pepper.
  4. Arrange the salad on four plates and garnish each plate with two pieces of goat cheese and four lukewarm dates.
  5. Drizzle the salads with the dressing and serve immediately.

Ingredients (for 4 servings):

12 dates, pitted
12 bacon strips
200 g mixed salad leaves, washed
100 g goat cheese (cut into 8 pieces)


Dressing:
2 tbsp raspberry juice or raspberry vinegar
2 tbsp grape seed oil
1 tbsp lemon juice
1 tbsp mayonnaise
salt and pepper
