Broccoli Cream Soup

Preparation:

 

  1. Put the butter in a pot, place it on the hob and let it melt with the special “melting” function. The select the special “pasta cooking” function. Add the onions and sweat until glassy.

  2. In the meantime, wash and clean the broccoli and cut off the stems. Coarsely chop the stems. Add half the broccoli stems to the onions and sweat. The remaining stems are not needed.

  3. Add broth and cook the broccoli stems until they are tender.

  4. Coarsely chop the broccoli fl orets, add to the broth with the salt and cook until tender.

  5. Purée the soup with the stick blender. Stir in the cream. Season to taste with salt, pepper and nutmeg, garnish with basil.
