Garlic soup with saddle of rabbit

Preparation:
- For the soup, place a pot with butter on the hob and heat on hob setting 6.
- Peel the onions, cut into strips, add to the butter in the pot and sauté until glassy. Add flour and stir with the onions. Pour in all the liquid and bring to the boil again.
- Peel garlic, cut into small pieces and add to the soup. Cover the pot with a lid and switch on the special cook pasta level on the hob. Simmer for about 40 minutes. Stir occasionally.
- Just before the soup has finished cooking, place a pan on the hob and heat on hob setting 6. Briefly fry the saddle of rabbit on all sides in the oil. Season with salt and pepper and cut up.
- Mix the soup with a hand blender until frothy and season before serving. Serve the soup with the rabbit cuts.

300 g saddle of rabbit
400 ml vegetable broth
200 ml white wine
200 ml cream
200 ml milk
100 g young garlic
100 g flour
50 g butter
2 onion
Oil for frying
Salt
