Fillet of Beef

Preparation:

  1. Place a grill pan on the stove and heat up on the highest heat setting.

  2. Wash the meat, pat dry. Add some oil into the pan and then sear the meat on all sides.

  3. Place the seared meat on a baking sheet and insert the meat thermometer. Put the baking sheet into the oven and stick the meat thermometer on the oven.

  4. Select the setting for tender and a core temperature of 59°C. The meat needs about 2.5 hours to cook.

  5. After cooking the beef fillet, remove from the oven and leave to rest for about 4 minutes. Then slice and season with salt and pepper.

 

Tip: If your oven does not have a tender setting, you can also set the convection oven to a cooking temperature of 80°C.
