Fruitcake

Preparations:
- Wash the raisins and pat them dry. Cut the plums, figs and apricots into small pieces.
- Peel, quarter and core the apples, and coarsely grate them.
- Put all ingredients in a mixing bowl and blend into a soft dough with the hand mixer.
- Grease a loaf pan (length about 30 cm). Add and smooth the dough.
- Put the baking pan into the combination steam oven on a rack and bake for about 60-70 minutes at 180°C using the professional baking function.
- Then take it out, let it cool in the pan for a few minutes, tip it out of the pan and allow it to cool fully.
Tip: The loaf lasts in a ventilated bread pot for about 2 weeks.

50 g Raisins
50 g Dried plums
50 g Dried figs
50 g Dried apricots
500 g Apples (e.g. Boskop)
100 g Honey
80 g Whole hazelnuts
80 g Whole almonds
320 g Whole spelt flour
1 packet Baking powder
½ tbsp Cocoa
20 ml Rum
1 tsp Cinnamon, ground
1 tsp Ginger, ground
½ tsp Anise, ground
1 pinch Fennel, ground
1 pinch Salt
100 ml Water
