Stuffed Zucchini Rolls

Preparation:

  1. Wash the zucchini, dab them dry and cut them lengthwise into thin slices. Brush with olive oil and season with salt and pepper on both sides.

  2. Put a pan on the hob and heat on high. Add butter oil to the pan and sear the zucchini slices on both sides until they are nicely browned and done. Take the zucchini slices out of the pan and let them drip off on paper towel.

  3. Cut the feta into cubes. Wash the arugula, dab it dry and chop it coarsely. Wash the tomatoes, remove the stems and cut them into small cubes.

  4. Put the feta cheese, arugula and cubed tomatoes into a bowl. Add olive oil, salt and pepper and stir. Put some of this mixture onto each zucchini slice. Roll up the zucchini and secure with a toothpick.

 

Tip: Goes very well with chicken breast filet.
