Zucchini and meatball patty towers

Preparation:

 

  1. Add the ingredients for the meatballs to a bowl and mix it with the dough hook of the electric mixer.
  2. Make about 12 small, flat meatballs from the mixture (about 5 cm in diameter) and put them side by side in a heat-resistant casserole dish on a rack in the oven.
  3. Heat the oven at 180 °C with the hot air function and bake the meatballs for about 20 minutes.
  4. Wash the zucchini, remove the ends and cut the rest into 12 slices of about 1 cm thick. Heat a pan on a medium hob setting. Pour the oil in the pan and brown the zucchini slices on both sides. Season with salt and pepper.
  5. Wash the tomatoes, remove the stalk base and slice.
  6. Place the zucchini and the meatball on top of each other to form the tower, add a little pesto on top and cover with the tomato slices. Season again with some salt and pepper. Stick some rosemary in the tomato as decoration.
