Focaccia

Preparation:
- Place the yeast and lukewarm water in a mixing bowl and stir until the yeast has dissolved. Add the flour, olive oil and salt and knead everything to a smooth dough.
- Cover the dough and let it rise in a warm spot until it is almost double in size.
- Grease a baking tray with some clarified butter. Preheat the oven with the top/bottom heat function to 180 °C.
- Knead the dough well again, roll out to about 1 cm thick and place it on the baking tray. Use a wooden spoon to press holes in the dough at random distances from each other.
- Peel the garlic and chop finely, mix with the olive oil and spread the top of the dough with it.
- Wash the rosemary, pluck it into small pieces and spread it on the dough together with the olives. Sprinkle with oregano and herb salt.
- Place the baking tray in the oven and bake the focaccia for about 20-25 minutes.

400 g wholemeal spelt flour
2 Tbsp olive oil
0,5 cube yeat
250 ml lukewarm Wasser
0,5 Tbsp salt
1 clove of garlic
10 green olives
10 black olives
1 large sprig of rosmary
1 Tbsp oregano
Herb salt to sprinkle
