Preparation:

  1. Place the yeast and lukewarm water in a mixing bowl and stir until the yeast has dissolved. Add the flour, olive oil and salt and knead everything to a smooth dough.
  2. Cover the dough and let it rise in a warm spot until it is almost double in size.
  3. Grease a baking tray with some clarified butter. Preheat the oven with the top/bottom heat function to 180 °C.
  4. Knead the dough well again, roll out to about 1 cm thick and place it on the baking tray. Use a wooden spoon to press holes in the dough at random distances from each other.
  5. Peel the garlic and chop finely, mix with the olive oil and spread the top of the dough with it.
  6. Wash the rosemary, pluck it into small pieces and spread it on the dough together with the olives. Sprinkle with oregano and herb salt.
  7. Place the baking tray in the oven and bake the focaccia for about 20-25 minutes.

250 ml lukewarm Wasser

0,5 Tbsp salt

1 clove of garlic

10 green olives

10 black olives

1 large sprig of rosmary

1 Tbsp oregano

    Herb salt to sprinkle
