Gnocchi with tomato sauce

Preparation:

  1. Put all the ingredients for the gnocchi in a bowl and knead into a dough. Cover the dough and let it rest in the fridge for about 30 minutes.
  2. Then form rolls with some flour from the dough. Cut these into small pieces.
  3. Place a pot with water and a little salt on the hob and bring to the boil on the highest hob setting. Add the gnocchi to the boiling salted water, bring to a boil, let it steep, then drain.
  4. Peel the onion and chop finely. Peel and crush the garlic. Wash the tomatoes, remove the stalk and dice.
  5. Put a pan on the hob and heat it up to a medium hob setting. Add the oil, diced onion and garlic and braise until glassy. Add the tomato cubes and simmer for 2 minutes.
  6. Add the tomato puree and water and mix well until a creamy sauce has formed. If the sauce is too thick, stir in some more water.
  7. Season with salt and paprika powder.
  8. Divide the gnocchi between 4 plates, add tomato sauce and sprinkle with grated parmesan and basil.

    400 g quark

    250 g wholemeal flour

    90 g butter

    2 eggs

    Salt

    1 pinch nutmeg, grated

    4 Tbsp herbs,

     

    finely chopped (e.g. chives, parsley, basil, thyme)

     

     

    For the tomato sauce :

    1 onion

    1 Tbsp oil

    1 glove of garlic

    4 tomatoes

    1 Tbsp tomato puree

    100 ml water

    Salz

    1 Tbsp paprila powder

    Tp sprinkle :

    50 g parmesan, grated

    A few basil leaves
