Preparation:

  1. Put the milk and yeast in a bowl and mix until the yeast has dissolved. Add the remaining ingredients for the dough and knead into a smooth dough. Cover the dough and let it rise in a draught-free place until it has doubled in volume.
  2. Grease the muffin pan. Preheat the oven with the hot air function at 180 °C.
  3. Peel the onions and dice finely. Place a pan on the hob and heat on the medium hob setting. Add the oil and onions and sauté the onion cubes.
  4. Clean the mushrooms and dice small. Wash the cherry tomatoes, remove the stalks and cut into quarters. Clean, wash and cut the broccoli into small pieces. Grate the parmesan.
  5. Once the dough has doubled in volume, add the prepared ingredients and half of the parmesan and knead in. Roll 12 balls from the dough, place them in the muffin pan and sprinkle with the rest of the cheese.
  6. Place the muffin pan on a rack in the oven and bake for about 20-25 minutes at 180°C using the hot air function.
  7. Then remove the muffins from the pan, let them cool slightly and serve while still warm.
