Berry tartlets

  1. Fill a small pot with cold water and soften the gelatine leaves in it.
  2. Clean, wash and drain the berries and decant in a mixing bowl. Purée using a hand blender. Add the yogurt, sour cream and agave syrup and mix well. 
  3. Remove the gelatine from the water and press out firmly. Throw away the remaining water. Put the gelatine back in the pot. Place the pot on the hob and dissolve the gelatine over low heat until it is completely liquid. Careful: Do not allow the gelatine to become too hot because it will not gel afterwards.
  4. Add the gelatine to the yogurt mixture, stirring constantly.
  5. Fill small jars or silicone moulds with the yoghurt mixture. Allow the tartlets to chill for 1 hour. 
  6. To serve, tip the tarts out of the moulds and garnish with berries and mint leaves.

200 g strawberries

500 g plain yogurt

200 g sour cream

50 ml agave syrup

9 sheets gelatine
