Vegetable wheels

Preparation:
- Wash the carrots, celery and potatoes thoroughly. Peel the celery and potatoes. Coarsely grate everything and place in a bowl.
- Wash the fresh herbs, pat dry and chop finely.
- Add the wholemeal flour, eggs, spices and herbs to the vegetables in the bowl and mix everything together well.
- Mould the mixture into small wheels.
- Heat a pan on a medium hob setting. Add the oil and sear the wheels on both sides.

250 g carrots
150 g celeriac
300 g potatoes
4 Tbsp wholemeal spelt flour
2 eggs
Pepper, freshly ground
Salt
Nutmeg, freshly ground
1 bunch parsley
1 bunch basil
2 Tbsp olive oil
