Vegetable wheels

Preparation:

  1. Wash the carrots, celery and potatoes thoroughly. Peel the celery and potatoes. Coarsely grate everything and place in a bowl.
  2. Wash the fresh herbs, pat dry and chop finely.
  3. Add the wholemeal flour, eggs, spices and herbs to the vegetables in the bowl and mix everything together well.
  4. Mould the mixture into small wheels.
  5. Heat a pan on a medium hob setting. Add the oil and sear the wheels on both sides.

150 g celeriac

300 g potatoes

4 Tbsp wholemeal spelt flour

2 eggs

Pepper, freshly ground

Salt

Nutmeg, freshly ground

1 bunch parsley

1 bunch basil

2 Tbsp olive oil
