Preparation:

  1. Finely chop the pickled ginger, place it in a mixing bowl together with the flour, sugar, ground almonds, egg and butter and knead into a dough with the dough hook of a food processor.
  2. Take out the dough and knead again with your hands on a worktop sprinkled with flour.
  3. Place the dough covered in the fridge for at least 30 minutes.
  4. Line a baking tray with baking paper. Preheat the oven to 180°C with the top/bottom heat function or to 160°C with the hot air function.
  5. Sprinkle the worktop with flour and roll out the cooled dough approx. 2 mm thick. Cut out the dough with biscuit cutters and place on the baking tray.
  6. Put the baking tray into the preheated oven and bake the biscuits in it for about 15 minutes.
  7. Then take them out and let them cool down.

Tip: After cooling down, the biscuits can be decorated as desired.
